Greek Lamb Meatballs with Tzatziki Sauce

Ingredients:

For the tzatziki sauce:

  • 1 cup Greek yogurt

  • 1/2 cucumber, grated and squeezed to remove excess moisture

  • 1 clove garlic, minced

  • 1 tablespoon lemon juice

  • 1 tablespoon chopped fresh dill

  • Salt and pepper to taste

Instructions:

  1. Prepare the meatballs: In a large mixing bowl, combine the ground lamb, breadcrumbs, onion, garlic, egg, parsley, oregano, cumin, coriander, salt, and pepper. Use your hands to mix until well combined.

  2. Form the meatballs: Take small portions of the mixture and roll them into meatballs, about 1 inch in diameter.

  3. Cook the meatballs: Heat a drizzle of olive oil in a large skillet over medium heat. Add the meatballs in batches, making sure not to overcrowd the pan. Cook for about 8-10 minutes, turning occasionally, until browned on all sides and cooked through. Remove from the skillet and set aside.

  4. Prepare the tzatziki sauce: In a small bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, salt, and pepper. Stir until well combined.

  5. Serve: Arrange the cooked meatballs on a serving platter and serve with the tzatziki sauce on the side for dipping. You can also serve them with pita bread, sliced tomatoes, cucumbers, and olives for a complete Greek-inspired meal.
